Ingredients

Instructions

Start by preheating your oven to 350°F (175°C). Arrange the pecan halves on a baking sheet and toast them for 8–10 minutes until aromatic and lightly browned. Watch closely to avoid burning. Remove from the oven and allow them to cool completely.

If using pre-made caramels, unwrap and place them in a microwave-safe bowl. Add 1–2 tablespoons of water to assist with melting. Microwave in 30-second intervals, stirring after each, until smooth and completely melted. Or, melt using a double boiler over low heat.

Line a baking tray with parchment paper or a silicone mat. Form small clusters by arranging 4–5 pecan halves in a star or flower shape—these will be the base of each candy.

Spoon or pipe about a teaspoon of the melted caramel into the center of each pecan cluster. Let it spread slightly over the pecans but keep some of the edges visible. Let the caramel set for 10–15 minutes either on the counter or in the fridge.

Place the chocolate in a microwave-safe bowl and heat in 30-second intervals, stirring in between, until smooth and glossy. You can also melt it over a double boiler on the stove.

Spoon or pipe melted chocolate over each caramel-covered cluster. Ensure the caramel is well coated. For an elegant finish, smooth the chocolate or swirl it decoratively. Optionally, sprinkle crushed pecans or a pinch of sea salt on top.

Allow the candies to cool and set completely—either at room temperature for 1–2 hours or in the fridge for 15–20 minutes. Once the chocolate hardens, they’re ready to enjoy.
